Here's an idea for your Library OPAC demo. Create a dummy record that you include in your training which is a spoof law book. Below is the bibliographical record for the one I use - feel free to use it if you like it (apologies in advance for the puns):

I use this for demonstrating truncation with crim* which gets you a lot of hits which you can then narrow down with a second term. Usually I say that the truncation "will give you crime / criminal / criminalisation / hair crimping" and then look for hair as the added term. Obviously, you can use the record to show whatever you want to demonstrate.
